Paleo Cassava Flour Pancakes

These cassava pancakes are thick, light, and fluffy — the perfect easy and indulgent breakfast!

Prep Time: 5 mins

Cook Time: 10 mins

Ingredients:

  • 3 eggs

  •  ¼ cup coconut oil, melted


  •  ¼ cup almond milk

  •  1 T raw honey

  •  ¾ cup cassava flour

  •  ½ t baking soda

  •  ¼ t salt

Instructions:
  1.  In a mixing bowl, whisk the eggs.cassava flour pancakes_step1 resized

  3.  Add the cassava flour, baking soda, and salt; mix well.

  4.  Cook by scant ¼ cupfuls a couple minutes per side on a greased griddle or skillet over medium heat, or until golden brown and cooked through.

  5.  Serve with maple syrup if desired.
